Curriculum Development and Education Materials
As a consultant for New Mexico State University and New Mexico Department of Health, I conceptualized a community-based model of delivering diabetes education through Cooperative Extension Home Economists and EFNEP educators, which became the award-winning Kitchen Creations: A Cooking School for People with Diabetes and the Control Your Diabetes for Life series. I developed the original content, curriculum, training materials, and supporting materials for these programs around 2000/2001, which continue to be delivered throughout the state by NMSU Cooperative Extension in partnership with the Department of Health.
